Nana's French Onion Soup

Ingredients:
2 tablespoons veg. or olive oil
1/4 cup butter
2 lbs.onions, thinly sliced
1/2 teaspoon salt
1/4 cup sugar
3 tablespoons flour
7 cups beef broth
1/2 cup dry white wine
8 slices French bread (butter and toasted)

Directions:
In 4/5 quart saucepan or soup kettle, melt butter with the oil over moderate heat.
Stir in onions and saute until onions are well coated, stirring occasionally.
Cover and continue cooking for 15 minutes until onions are limp. Uncover and
add salt, sugar and flour, stirring for 2 to 3 minutes.

In separate pan prepare beef broth. Stir hot stock and wine together and simmer 20 to 25 minutes. Taste add salt and pepper if needed.

Ladle soup into bowls. Add slice of French toast. Add grated Swiss cheese or Gruyere. Sprinkle with parmesan. Bake 350 degrees for 15 minutes.
