1 pound dried kidney beans
3 cups chopped onion
1 cup chopped green onion
1 tablespoon garlic salt
1 cup fresh parsley
1/4 tablespoon dried whole oregano
1 teaspoon red pepper
1 tablespoon Worcestershire sauce
1 teaspoon pepper
1 1/2 teaspoons hot sauce
1 ( 8 oz ) can tomato sauce
1 1/2 pounds Cajun smoked sausage, cut in 1/4 inch slices
Hot cooked rice
Directions:
Sort and wash beans; place in large Dutch oven. Cover with water 2" above beans; let soak over night. Saute onions and sausage together. Add to beans. Stir in next 8 ingredients and continue to cook for at least an hour. The longer you cook it the better! Add more water if necessary. Serve over rice. Yield 6 to 8 servings.
