Ingredients:
2 pounds boneless skinless chicken breast
1 pound bowtie pasta
3/4 cup thinly sliced celery
1/4 cup minced red onion
1 1/4 cups mayonnaise
1 1/4 cups creamy poppy seed salad dressing
salt and pepper
1 cup dried cherries
4 cups baby spinach leaves
1 cup toasted pecans or walnuts
Directions:
Grill chicken. Cool and cut into bite-size pieces. Cook pasta. Rinse and cool. Add celery, onion and chicken to pasta and set aside. In a seperate bowl, stir together mayo and salad dressing. Combine the pasta mixture to taste, reserving any remeaining dressing to add later as needed. Add salt and pepper to taste.
Soak cherries in hot water 10 to 15 minutes. Drain well. Just before serving, stir cherries and spinach into salad. Top with nuts.
