1/23/11 VARIATION: use whole wheat flour instead of white. Use chocolate chunks instead of chips. use 1 cup of almonds and macadamia nuts, ground and add a handful of chopped pecans. Liked this better than the recipe below. Since the nuts are salted, don't add any additional salt and add a little more sugar... 1/4 cup.
This is a take on the Doubletree cookies that I love so much. I am still playing around with it to make them even better, but Steve said they are the best chocolate chips he has ever had. So here it is...
Ingredients
1 cup salted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
2 1/4 cups all-purpose flour
1/2 cup rolled oats, ground up
1 1/2 teaspoons vanilla extract
1/2 teaspoon lemon juice or I even used a squirt of lime instead.
1 1/2 tsp teaspoon baking soda
1 teaspoon salt
1/4 teaspoon ground cinnamon
1 and 1/2 pakages of semisweet chocolate chips
1 1/2 cups pecans, ground up. You can leave a few bigger chunks in there.
Directions:
Puree the oatmeal and nuts in a processor seperately. Combine the oats with the flour, baking soda, salt and cinnamon. Set the nuts aside.
Cream the butter and sugars. Add vanilla, lemon juice and eggs until smooth. Stir the dry mixture in the wet mixture and blend well. Add the chocolate chips and nuts to the bowl and stir until combined.
Drop by 1/4 cup measurments on the pan and do not smash it down at all. It works best if the dough is refrigerated overnight.
