I used Nana Lasses fried shrimp as an inspiration for this recipe. I didn't measure out the ingredients but this is my best guess at what I did.
1 lb raw butterflied shrimp
The Batter:
2 eggs
1/2 cup of beer (I used a wheat beer) * use enough so the batter isn't too thick
1/4 cup of flour
Dip the raw shrimp in the batter above and then in the mixture below:
equal parts of sweetened shredded coconut and cornflake crumbs. Add in a little flour to keep the mixture dry.
Fry the shrimp on a saucepan of canola oil for a few minutes... until golden brown and YUMMY!
